The 2011 Gran Reserva Brut Nature is a blend of 40% Macabeo, 38% Parellada and 22% Xarello, and has no residual sugar (brut nature). It matured on the lees for five years. It mixes notes of apples and some lees, with a balsamic touch. It feels better integrated with smaller bubbles. The palate is quite sharp, with marked acidity.

The 2010 Gran Reserva Brut Nature, is a blend of the classical Cava grapes with four grams of added sugar (so in total almost six grams in the wine) and four years on the lees. It still feels quite young and with apple notes that are stronger than the aromas of yeast autolysis. The palate is quite sharp, with marked acidity and fine bubbles.

The 2009 Agusti Torello Mata Brut Nature Gran Reserva produced with Macabeo, Xarello and Parellada grapes is just a step above in lees and yeast aromas compared with the Reserva, showing the extended lees contact of around three years. Both nose and palate are more subtle, with better integration of the bubbles, clean flavors of apple tart, fennel and aniseed. A very pleasant, textbook Cava. Drink now-2016.
