The dark purple-colored 1997 Givry Clos du Cellier aux Moines has cassis liqueur-like aromas, and a mouth-coating character crammed with blackberries, stones, and hints of oak. This is a masculine, powerful, structured wine that exhibits tar and licorice-like nuances in its long and supple finish. This is a wine that will age and evolve magnificently with cellaring. Anticipated maturity: 2001-2010. Jean-Marc Joblot, one of the world's great Pinot Noir producers, harvested extremely early in 1997, in order to "maintain adequate levels of natural acidity." Since Joblot's work in the vineyard always ensures moderate yields (the 1997 Cellier aux Moines was harvested at 28 h/h), his grapes achieve physiological ripeness earlier than most, providing him with the luxury of setting early harvest dates.
