A lean and light Sangiovese, the 2017 Perlato del Bosco has a great tonic freshness to it. Yields of this fruit were down by 40% in this hot vintage, an early harvest was scheduled in order to avoid any jammy notes. (The rest of the fruit that didn't pass the early selection at harvest went into some of the estates lower-tier wines, such as the Rosso dei Notri.) The result here is a fresh and crunchy red to match with a cheesy pasta such as cacio e pepe.
