The 2015 Bolgheri Rosso Volpolo comes from a warmer vintage compared to 2016, and the wine delivers a broader, loosely knit texture as a result. Each fermentation at Podere Sapaio is done by varietal and by vineyard parcel. By the time they get to blending, there are 21 different wines to mix and match. The final results are aged in barrique and tonneaux for 14 months. These days, it is about 30% new wood, whereas before it was 50%.
