The 2007 Bolgheri Rosso Volpolo is showing better than the 2008, with light notes of candied orange or exotic spice, with some Asian spice as well. You can taste the more extracted nature of the warm vintage. This blend of Cabernet Sauvignon, Merlot and Petit Verdot was all aged in barrique, with mostly new oak. The use of larger tonneaux did not start until 2009.

The wine is plush and rich with fragrant aromas of black cherry, blackberry, spice, leather, cola and tobacco. This beautiful blend of Cabernet Sauvignon, Merlot and Petit Verdot would pair perfectly with classic osso buco, slow cooked until falling off the bone. ——M.L.(12/15/2010)—— 92
