Philip Togni's 1987 will be a controversial Cabernet Sauvignon. Black/ruby in color, this exceptionally concentrated, full-bodied wine has an intense bouquet of blackcurrants, Provencal herbs, and toasty oak. Dense and chewy in the mouth, with fabulous ripeness and concentration, yet a significantly high level of tannin, this large-scaled, authoritative Cabernet may ultimately merit a higher rating when it reaches full maturity. My best guess is that this wine will be at its peak between 1993-2005. This is dramatic and individualistic California Cabernet at its best. Wow! This guy can sure make super Cabernet!
