The 2011 Cava Dama is produced with Chardonnay and Parellada and aged in bottle for at least 18 months. It has six grams of sugar, which is well-integrated into the wine. It displays a strong, penetrating bouquet of yeasts and bread dough intermixed with some white flowers and chalk. The palate is medium-bodied, with high acidity and good balance and persistence. At this price, this Cava is a bargain. Drink now-2015.
Some of the traditional Cava houses age their liqueur d’expedition in barrels, which give the wines a smoky, nutty, barrel-fermented feeling to them, as seems to be the case with the Cavas I tasted from Naveran. I liked the character of the wines, combining mineral sensations with plenty of yeast autolysis aromas and that smoky character.
