The youngest of the single-harvest Pedro Ximénez released from a bottling in 2017 is the 2011 Pedro Ximénez de Sacristía, which is the lightest of all, with higher alcohol (16%) and less acidity and sugar. I'm sure the conditions of the harvest play a role here, but I believe the effects of the sun-drying of the grapes and then the years in oak, with the evaporation and concentration, are so strong that they hide the imprint from the vintage. So, this is the simplest of all the years I tasted, with straightforward flavors of molasses, raisins and figs and a piquant quality, perhaps from the alcohol. The palate is round and dense, with moderate acidity. Only 277 half bottles.

The perfumed 2008 Pedro Ximénez de Sacristía spent almost seven years getting slowly oxidized and concentrated in small oak barrels and feels denser and more complex than the 2011, more nuanced and deep. 304 half bottles. The price is for a half bottle.

It's interesting to taste the different vintages together, as that's when you see the minute differences difficult to capture in words between the 2006 Pedro Ximénez de Sacristía and the rest, but the wines get more concentrated, complex and intense as they get older. This is still in its middle age, getting savorier and with notes of dark chocolate and carob beans. It's denser than its younger siblings. 582 half bottles.
