The 2008 Brut Reserva offers up aromas of biscuit, mineral, and apple leading to a nicely proportioned, quite dry (4.5g dosage), lengthy wine that is meant for drinking over the next 12-18 months. Agusti Torello Mata has a reputation as one of Spain’s foremost Cava producers and my visit in January 2011 did nothing to disprove it. The stated goal is “to make Cava with soul” working with only the traditional grapes. All of the fruit utilized is at least 30 years of age. The first two offerings are excellent values. The 2007 Brut Reserva offers up a pleasing nose of mineral, biscotti, and melon leading to an elegant sparkling wine with tasty flavors, good concentration, and excellent focus. Drink it over the next 1-2 years. Agusti Torello Mata is one of Spain’s finest Cava producers.
