The Pavelot 2006 Savigny-les-Beaune Les Peuillets is strawberry- and black tea-scented, comes to the palate quite refined in tannin, its tender red fruit underlain by clean, marrowy meatiness; and finishes with juicy refreshment and lift. I would expect this exhibition of the generous if delicate side of its vintage to be best enjoyed over the coming 2-3 years, but this site often proves surprisingly age-worthy even in lighter-weight renditions.
Hugues and Jean-Marc Pavelot – who began harvesting September 20 – approached the fruits of this vintage with caution and were in most instances very restrained in promoting fermentative extraction. The results are mixed, but in the best instances their approach has paid off in charming, youthfully satisfying wines.
