The 2005 Cairanne Haut-Coustias, which is aged in 550- to 600-liter demi-muids and larger foudres, is outstanding. A huge, peppery, Provencal nose of kirsch, blackberry and cassis is followed by a full-bodied wine with plenty of muscle, richness, and depth. It avoids some of the hard tannins that can be found in some 2005s.
