With respect to Dr. Parce's sweet wines, the 1991 Collioure Les Junquets is made from 90% late-harvested Syrah and 10% white wine grapes such as Muscat and Malvasia. The wine offers a beautiful peppery, fragrant nose, sweet, full-bodied, unctuously-textured flavors, and a huge, rich finish. Exotic and distinctive, this wine can last 20+ years. It should be served as an aperitif before the meal.All of the Collioure offerings are from organically farmed vineyards and the wines are bottled without fining or filtering, thus tasters will encounter considerable sediment.Dr. Andre Parce and his son, Jean-Michel, are among the most highly esteemed winemakers in all of France. Their wines are found on more two and three-star French restaurants' wine lists than any other producer's.
