At 15 years old, the nose of the 2007 Cabernet Sauvignon is resplendent with truffle, mushroom, freshly turned earth, tanned leather and tobacco leaf. The fruit goes in a licorice, aniseed, star anise, hoisin direction. It is exotic, earthy and spicy in the mouth, with arnica, blackberry and bloodroot. Any longer and this will miss its final window for drinking—this is morphing into an "old wine." It has great persistence of flavor through the finish.
