Henri Boillot's 2000 Volnay-Caillerets is a Burgundian version of Chateau La Mission Haut Brion. A product of 18 hectoliter per hectare yields, it is dark ruby-colored and displays stony black fruits, licorice, iodine, meat, roasted oak, and red cherries in its aromas. On the palate, this brooding, chewy-textured, medium to full-bodied wine is dense, layered, and noble. Bacon, tar, blackberries, cassis, and intensely sweet black cherries vie for the taster's attention throughout its flavor profile and exceptionally long finish.
