The estate’s 2007 Il Pareto, Cabernet Sauvignon, is beautiful in this vintage. Dark varietal fruit melds in cassis, cinnamon, cedar and smoke. Here, too, the warmth of the vintage comes through in spades as this rich, generous red opens up in the glass.
