The 2011 Perles Blancques is a golden-colored sparkling Cava produced with a blend of Pinot Noir and Chardonnay with a nose of freshly-baked bread and brioche with high (citric) acidity and flavors of toasted cereals and yeasts, and a medium-bodied palate with great weight, and persistence, ending quite dry. This is a superb Cava. Drink now-2016.
Some of the traditional Cava houses age their liqueur d’expedition in barrels, which give the wines a smoky, nutty, barrel-fermented feeling to them, as seems to be the case with the Cavas I tasted from Naveran. I liked the character of the wines, combining mineral sensations with plenty of yeast autolysis aromas and that smoky character.
