Still in tank when I tasted it, the Cady 2007 Cuvee Volupte Selection de Grains Nobles features salt-tinged peach, strawberry, and quince preserves mingled with pineapple, Persian melon, and grapefruit in a luscious, viscous yet buoyant display of real ennoblement that preserves sufficient acidity to keep a clean finishing edge. It should be lovely to follow for at least the next 10 years. I was sligthtly disappointed with Philippe Cady’s collection of 2009s – tasted from tank – and unfortunately could not take the time to taste his finished 2008s. There are an amazing 1,000 liters of Cady’s 2004 Cuvee Volupte Selection de Grains Nobles, which I tasted still in tank soon after filtration. With refreshing notes of green tea and Chartreuse amid the honey of botrytis, this preserves an ethereal personality and sense of buoyancy for all of its honeyed viscosity and vanilla cream palate personality. Quince jelly and peach preserves are shot through with a bracing, juicy, fresh lemon element, offering welcome contrast and counterpoint to the honey and vanilla cream, and the wine finishes with lovely length and clarity. This will age nicely for 15-20 years, I suspect. In top years, Cady bottles a super-selection, and his 2004 Cuvee Volupte Selection de Grains Nobles lives up to its name. Smelling of chamomile, honey, white raisin, and truffle, it saturates the palate with rich and viscous yet pure and delicate essence of honey, quince jelly, marzipan, and white raisin. In the finish, hints of smoky pungency and citrus rind bitterness offer counterpoint as well as a reminder of the wine’s botrytis origins.
