There are 1,000 cases of the stainless steel-fermented and aged 2012 Paso a Paso Blanco Organic, a 100% Sauvignon Blanc cuvee revealing a textbook varietal character of figs, melons and grapefruit notes. This expressive, light-bodied, crisp, fresh white can be enjoyed over the next year. Bodegas Volver, a joint venture between importer Jorge Ordonez and Rafael Canizares, produces wines from huge holdings of 252 acres in La Mancha, 457 acres in Alicante and 125 acres in Jumilla.
