Undergoing complete malolactic with 30 months resting on its lees, the 2005 Method Traditionalle Sparkling has a light, floral nose, well defined with touches of white flowers and a little brioche. A vibrant palate, quite commercial but well balanced, reserved on the entry and then building with green apple and citrus notes, leading to quite a dry, conservative finish. An unpretentious but finely tuned sparkler. One of Martinborough’s finest exponents, I think Palliser Estate deserve as much attention as the likes of Ata Rangi and Martinborough Vineyard because these wines deliver time and time again.
