Walch’s 2004 Beyond the Clouds is the estate’s signature wine. A Chardonnay-based blend, it opens with expressive aromatics that lead to exotic ginger, passion fruit, mango, pineapple and spiced toasted oak sensations in an open, sweet and full-bodied style. I generally decant this richly-textured white for 30 minutes prior to serving and use Bordeaux stems, which I’ve found helps the wine express the full range of its aromas and flavors. Anticipated maturity: 2007-2012.
