Tasted blind at the Burgundy 2011 horizontal tasting in Beaune. The 2011 Chablis 1er Cru Vaillons has a laid back, nonchalant bouquet with light lime flower, mineral and chalky scents that gradually gain cohesion on the glass. The palate is crisp on the entry, but very generous and well balanced. There is a touch of orange zest and lemongrass, a gradual build until it fans out beautifully on the finish.
