The Chablis Vaillons has a lovely nose composed of slate, minerals, and lemon drops, as well a flinty, chalky, and citrus zest-packed flavor profile. This is a medium-to-full-bodied, bright, lively, well-balanced, and rich wine. Projected maturity: 2000-2004. All of Drouhin's whites, with the sole exception of the Montrachet, were bottled between early September and the end of October, 1997.Importer: Dreyfus Ashby, New York, NY; tel (212) 818-0770.
