Plum paste, cooked ginger, and a brackish note of alkalinity in the nose of Morot’s 2007 Beaune Aigrots lead to a polished palate that nicely balances suggestions of cocoa powder with invigoratingly tart but sweet fruit, while suggestions of crushed stone, humus, tobacco, and leather add interest to a finish free of obtrusive tannin.
