It has been a long time since I recommended three wines from St. Clement. The new Japanese owner, Sapporo, has gotten serious about upgrading the quality. The 1990 Cabernet Sauvignon displays a dense purple color, a ripe, vanillin-scented nose, and rich, medium to full-bodied flavors that reveal admirable glycerin and extract, as well as a sense of balance. The bouquet and flavors demonstrate that the wine has not been excessively processed or acidified.
