Seamless and totally expressive in the glass, the 2007 Montrachet is another wine built on texture, but it is also a bit more cool and polished than the 2008 tasted alongside it. Even with all of its intensity, the 2007 retains striking freshness throughout. Lemon comfit, chamomile and a host of dried flower notes are pushed forward in a silky, layered Montrachet that brings together opulence and finesse like few vintages can. This is another wine that just gets better and better over the course of the evening. The 2007 is unusual in that it was picked well after all the Pinots had been brought in.
