The surprisingly aromatic 2021 Ercavio Blanco was produced with Airén grapes from a vintage with snow, frost and hail that lowered the yields to only 30% of a normal year. The grapes come from old vines, and the wine fermented with selected yeasts at low temperature for two months and was kept with the lees until bottling in December. It has some floral notes, herbs and spices and a tropical twist. The palate reveals a soft texture and mellow acidity with good ripeness and 13% alcohol. 15,000 bottles produced.
