The Chablis 1er Cru Montée de Tonnerre 2011 from William Fèvre has a more open and expressive bouquet compared to others in the flight, allowing the limestone and flint. The palate is crisp and vibrant with good acidity, fine depth and tension, quite spicy with a slight resinous note coming through on the complex, slightly nutty finish. This is a more cerebral Chablis, rather mercurial in the glass, and for that reason an absorbing proposition.
