Suggestions of black olive and roasted meat rise from the glass of Pavelots' 2006 Savigny-les-Beaune Serpentieres, which represents a new appellation for them this year. A bouillon-like richness and salinity saturate the palate, though this does not have the ripe fruit element or the refreshment of the Peuillets.
Hugues and Jean-Marc Pavelot – who began harvesting September 20 – approached the fruits of this vintage with caution and were in most instances very restrained in promoting fermentative extraction. The results are mixed, but in the best instances their approach has paid off in charming, youthfully satisfying wines.
