All of Toros' wines come from a zone called La Ponca that directly abuts the Italy-Slovenia border, and this particularly fresh Sauvignon Blanc (along with its 14.5% alcohol content) calls out for one of those yummy Slovenian chicken and spaetzle dishes with plenty of sour cream. The Toros 2018 Collio Sauvignon imparts immediate energy and vitality to the senses. This is a very precise expression of the grape with tangerine skin, green melon, orchard fruit and crunchy pear. Those fresh and tonic fruit sensations are framed by some light mineral notes of crushed sandstone or chalk. The wine's aromatic balance is well achieved and folds smoothly into its tight, lean-bodied texture. This is a release of about 8,000 bottles.
