The pungent or sharp nature of this grape's characteristic aromas seem to have been muted or faded in this warm vintage, which sees contact with stainless steel only. The 2017 Collio Sauvignon does offer the tight delineation you should expect of this grape—with notes of candied orange peel, honey and mineral—and this is especially true of the mouthfeel. However, the sharpness of these aromas is a little softer or fuzzier at the edges, and the wine seems a little tired and hot in general. It lacks verve. Still, it should work just fine with a simple pasta and vegetables. Production was limited to 6,000 bottles.
