Representing a slightly bolder and more international approach, the 2009 Amarone della Valpolicella Classico Collezione Ca del Pipa Cinque Stelle sees a more aggressive oak regime with three years in 60% oak casks and 40% new French barrique. You are immediately dealt a powerful aromatic lineup that includes black cherry, bruised apple, chocolate-covered cherry, maple syrup, cinnamon and ground nutmeg. This is an in-your-face wine with a thick, oozing core of ripe fruit and dark spice. It has the muster to last ten years or longer. Drink 2015-2025. Sergio and Maria Castellani farm 40 hectares in the Classico zone that are almost all planted to the traditional Pergola training system. The overhead trellis is making a comeback in these beautiful hills after many years of experimentation with cordons, cane-pruned vines and other international systems.
