The 2007 Uvae Brut Nature is a blend of Xarello and Chardonnay partly aged in oak and kept in contact with the lees for six years before being disgorged. It displays a bright, deep yellow color with notes of smoke, yeasts, brioche and bread dough. The palate is fresh, with some balsamic flavors, razor-sharp acidity. I’d have expected a little bit more complexity for the price and age, but it’s still a well-crafted, pleasant Cava. Drink now-2018. This is a young Cava house run by two brothers who produce young (perhaps a little too young), clean, modern Cavas, with high acidity – good to have with food. 560,000 bottles produced per year. The 2006 Uvae Brut Nature is a blend of Xarello and Chardonnay, likewise without any expedition liqueur. It has a glorious bouquet of wild honey, honeysuckle and beeswax that is very well-defined and demonstrates great focus. The palate has a crisp, tense, almost Zen-like entry with noticeable acidity that maintains great vivacity and sharpness. The finish is minimal, allowing the minerality to come through. Superb. Drink now-2018. Rimarts is owned and run by Ricard and Ernest Martinez. It is a small, family run operation where Cavas spend a minimum of 24 months on their lees.
