The 2014 Paso a Paso Verdejo, which is not from an organically farmed vineyard, seems to have a slightly more floral and pretty side to its fragrance, but again, on the palate it is essentially correct, fresh, clean and an ideal aperitif style of wine. Drink now.

The 2013 Paso a Paso Verdejo (100% Verdejo) takes advantage of this indigenous white grape that is so common in parts of Spain. It offers up aromas of honeydew melons, figs and citrus blossoms. Light-bodied, fresh and vibrant, it is meant to be consumed in its first 12 months of life.

The 2012 Paso a Paso Verdejo (an indigenous varietal that is making better and better wines in the hands of top Spanish producers) exhibits attractive notes of lemon oil, white currants and tangerine skins. The wine is medium-bodied and fresh, but falls off quickly in the mouth. Consume it over the next 12 months. Bodegas Volver, a joint venture between importer Jorge Ordonez and Rafael Canizares, produces wines from huge holdings of 252 acres in La Mancha, 457 acres in Alicante and 125 acres in Jumilla.
