Produced with a blend of 40% Xarello, 25% Macabeo, 25% Chardonnay and 10% Parellada, the 2010 Gran Juve y Camps is a selection that went through malolactic fermentation and a third fermentation in bottle in contact with the yeasts for some 48 months. This was my favorite of the five wines I tasted from Juve & Camps. With its yeasty aromas, notes of brioche and baked bread showing camphor and other balsamic aromas, this is unmistakably Cava. The palate showed smaller although still abundant bubbles and a more polished acidity. A Brut with eight grams of sugar. 60,000 bottles produced.
