In the latter part of the 1980s Dominique Lau-rent invented the concept of a "haute cou-ture" negociant, specializing in the highest-quality barrel aging of tiny quantities of wines that were selected for their excep-tional grapes (old-vine pinot noir). His unique process of keeping wines on their lees for extended periods of time, without racking and with a minimum of sulfur (or none at all), make the wines very difficult to judge before their final racking and bottling. But it's worth the wait, for the wines acquire a fullness of texture and an aromatic complexity that really set them apart. Especially since the quality of the oak aging has been refined. They now use less new wood, and employ only barrels made by their own cooperage from Troncais oak, which is incomparably dried and toasted. The house range starts with the "Tradition" (aimed at restaurants and wide distribution), which is similar to a second wine from a Bordeaux chateau, and continues with the "Villages n01" and the old-vines cuvees made from the best lots and the best barrels, bottled the old-fashioned way, by hand, one by one, which may explain cer-tain micro-variations from one bottle to another. The 2006 vintage is certainly one of the most successful ever, and will become collector's items, especially the Cote de Nuits Grand Crus.
