The 2007 Chardonnay (70%)-Sauvignon Blanc (20%)-Picpoul (10%) was aged on its lees in stainless steel for four months with batonnage. The nose exhibits herbal notes along with green apple and slate. This leads to a crisp, vibrant wine with hints of peach emerging on the palate. The wine has excellent depth, concentration, and length. Drink it over the next 1-2 years.
