A pretty blend of 60% Riesling and 40% Sauvignon Blanc, the 2020 Enosi ages in stainless steel and oak casks for six months. The wine delivers citrus, white fruit and delicate petroleum. Fruit is sourced from a vineyard located in Sella (in the village of Termeno) at 500 meters above sea level with calcareous clay soils, which give rise to tonic wines with good acidity. Production is 8,000 bottles.

A blend of 60% Riesling and 40% Sauvignon Blanc, the Baron di Pauli 2019 Enosi busts out lots of sparkle and energy. I definitely smell the Riesling with that touch of mineral or flint and petroleum smoke. There's great tension and freshness here, just enough for a rich lobster bisque. I like the character here—clean and pristine. Some 8,000 bottles were made.

On the nose, this vintage presents a fascinating patchwork of aromas spanning from passion fruit and citrus to smoke and flint. You get a touch of something that reminds me of a crushed vitamin pill. This is a lean and compact expression that feels tight and snug on the palate. Serve it with a skewer of grilled prawns. Winemaking is executed stainless steel.
