Cain Cellars has been making increasingly fine wines since 1987 and the 1990 and 1991 offerings would be worthy additions to any Cabernet enthusiast's cellar. The 1991 gets my nod as being slightly better than the 1990. Fleshier and more deeply extracted, as well as possessing a superb sense of balance, it offers an attractive herbal, cassis, and chocolatey nose, sweet, curranty, expansive flavors, decent acidity, and a long, fleshy, spicy finish. While it will be flattering to drink early on, it should keep for at least a dozen years.
