In 1991, young Philippe Engel decided to utilize a higher percentage of new oak, extend his cold maceration prior to fermentation to 4-5 days, and put his wines in the bottle without filtration. The results are wines that rival his 1990s. The well-colored, stylish 1991 Echezeaux offers a sweet, perfumed, floral, red and black fruit-scented nose, rich, medium-bodied flavors with good balance, ripe tannins, and a moderately long finish. Delicious now, it should continue to drink well for 7-8 years.
