The 1991 Cabernet Sauvignon is unquestionably one of Souverain's finest Cabernets in recent decades. It exhibits a saturated dark ruby/purple color, a blossoming nose of cassis, herbs, and spicy new oak, medium to full body, excellent concentration, soft enough tannin to make it accessible and delicious now, but enough structure and concentration to last for 10-12 years. The low price makes this beautiful wine a super bargain!Chateau Souverain is clearly on a hot streak with excellent wines across the board, possessing the two rare virtues of (1) high quality and (2) modest prices.
