The 2017 Pouilly-Fuissé Les Chevrières is superb, unfurling in the glass with aromas of crisp yellow apples, mandarin, pastry cream and frangipane. On the palate, it's medium to full-bodied, elegantly textural and incisive, with racy acids, impressive reserves of structuring dry extract and a long, precise finish. The most tensile and tight-knit of Cornin's 2017s, this is beautifully balanced and built for the cellar—though impatient readers will find plenty of immediate gratification if they pull corks now too.
