The 2013 Xarello Font Jui comes from organically and biodynamically farmed vineyards (they have 34 hectares in the process of being certified by Demeter) planted in the year 2000. The whole bunches are pressed and the must fermented in 300-liter oak barrels where it matured in contact with the lees and with battonage. Both wood and yeasts are very nicely folded into the wine, the differences with the other Xarellos are marginal at this point in time, maybe they develop differently with some more time in the bottle. Good acidity, clean flavors, nice focus. 7,000 bottles produced.
