This unwooded, hence the title Virgin, wine blooms in the glass. This wine is given considerable lees contact, but no exposure to wood. The result is a layered, textured, expansively rich, lusty style of Chardonnay that emphasizes this varietal's honeyed, citrusy fruit. At first the wine appears rich and layered, but somewhat simple. As it sits in the glass, more and more nuances emerge. I found myself enjoying this wine more with each additional sip. Many unwooded Chardonnays are also under-fruited, but this example possesses the richness to make a believer out of anybody. Is this Australia's answer to a grand cru Louis Michel Chablis?
