This blend of 50% Corvina, 30% Corvinone and 20% Rondinella sees 20 days of appassimento and 18 months in oak. Only 5,000 bottles were made of the 2015 Valpolicella Classico Superiore I Cantoni, a bright and fruit-forward red with a mid-weight build and fragrant tones of bold cherry, blackberry and plum with mildly dried tones of raisin and figs. This hearty wine would pair well with a not-too-spicy version of chili con carne.
