Luminous and crisp, the 2012 Soave Classico is a tight and tonic white wine that portrays elegant mineral tones next to light shadings of peach and citrus. It is beautifully balanced and elegantly tempered, but also shows restraint and a somewhat timid side. The crisp acidity brings it alive in the mouth. After a long day tasting for this report, this is what I bought back home to pair with my favorite Chinese take-out. Drink 2013-2015. The Pieropan family makes impossibly delicious Soave Classicos and has set the benchmark for today-s Soave Revival. I can-t think of another Italian region that has reinvented itself so successfully. Sadly, my favorite wines - the Soave Classico Calvarino and the Recioto Le Colombare - did not make it in time for my tasting so I'll need to add those reviews later.
