Peter Lehman’s 2007 Botrytis Semillon, sourced from a single vineyard, saw 20% of the wine fermented and aged for 8 months in 20% new French hogsheads with the balance in stainless steel. With 30% of the wine botrytis infected, the wine’s peach-fruit dominated flavors and aromas are also marked by honey and spice notes.
