Beginning dusty and mineral-driven, the 2018 Cabernet Sauvignon Heather Hill possesses a dark-fruited core while offering oak-spiced essences in the glass. Full-bodied, the palate is still tight; however, it shows fantastic complexity. The wine concludes with a somersaulting and persistent finish that continues to evolve in the mouth, with ripe and succulent dark-berry flavors, dusty tannins and a delicate mineral tension that has me daydreaming about fire-roasted chops. The wine rested for 19 months in all French oak, 75% new. 700 cases were produced.
