Packaged in a 500-milliliter bottle, the 2011 Recioto della Valpolicella Classico is inky dark and sweet with thick concentration, lasting density and a fun juxtaposition between smoky mesquite aromas contrasted against bitter chocolate, rum cake and cherry liqueur. The Santa Sofia house blend sees Corvina and Corvinone making up 70% of the blend, with 30% Rondinella in a supporting role. The grapes are submitted to the appassimento process for up to 120 days, and the wine is aged for 14 months in French oak. The wine's sweetness contributes to the thickness and the soft volume of the mouthfeel. Some 8,000 bottles were made.
