The NV Palo Cortado Baco Imperial VORS produced from Palomino grapes aged in old barrels for an average of 30 years is marked by its time in wood, with medicinal and balsamic notes and a slightly volatile (varnish) character. The palate is full and round, with good intensity and the recurring note of hazelnuts appearing in the dry finish. Drink 2013-2017.
Dios Baco is a recent operation in Jerez de la Frontera, created in 1992, when Jose Paez Morilla purchased an old winery and its wine stocks, but with history that goes back to 1848. Other than a complete range of Sherries they also produce Brandy and Sherry vinegar, and most of their production is exported, so they are relatively unknown in Spain.
