Cabernet Sauvignon is king at Togni, and they are wines of extraordinary concentration, flavor dimension, and aging potential. The 1988 Cabernet Sauvignon Tan Bark Hill Vineyard, made from purchased grapes from Spring Mountain (and cellared by Togni for most of a decade), is a beefy, herb-tinged, spicy Cabernet. It is full-bodied, dense, and rich, but the tannin is still aggressive, giving the wine a rustic personality. It will continue to age for another 10-15 years.
